Caripito Fine Flavor Premium

 

Caripito Cocoa is found in Venezuela’s Eastern region in a small town located in the mountainous North bound of the Monagas State, very close to the town of Caripe. It grows in humid tropical forests under shadow, in hillsides and mountains. This region is characterized by intermittent rainfall with occasional prolonged dry spells.

At the time when the American Continent was discovered, the Caribs (Kalinagos) and Chaimas were one of the dominant native indegenous people in the Caribbean coast of Venezuela. It was said that there was a chief named Caripe, whose son, named Caripito (“Little Caripe”) went down the Caripe river towards its confluence with the San Juan River (which empties into the Gulf of Paria) and founded the town of Caripito in the lowlands.

Caripito’s Fine Flavor Cocoa plantations date from the early 1700’s when the spreading of this precious fruit started from the south bound of the Maracaibo Lake (Sur del Lago) through the Caribbean coast of Venezuela. In 1713, a Capuchins’ mission was settled with the contribution of the native Caribs and Chaimas. With the settlement of this religious mission, the Cocoa cultivation grew exponentially in order to supply its precious beans to the European continent.

Given that Caripito is our operational headquarter, TERRACAO specially promotes, together with our Associate Farmers, the cultivation of sustainable and evironmental friendly Cocoa in this important and sometimes overlooked producing area of Venezuela. Under the constant supervision of our Specialized Technical Team, new plantations are being established while others are being expanded. The use of appropriate agricultural practices is common as well as the permanent replacement of agrochemicals with organic products. All this effort is done to increase the quality and productivity of the crop in this historic site, thus helping to raise the quality of life of our Associate Farmers, their families and their communities

Flavor

Strong Cocoa flavor, with acidity, bitterness and intermediate astringency, with fruity flavors (black and red fruits) and dried fruits notes.

Aromas

A Cocoa aroma is appreciated with ripe fruits, nuts and hints of tobacco.
